Easy Peasy Caramel Banana Cake

My friends and family love this cake. It is a sure-fire crowd pleaser. Everything is blended together in one mixing bowl which means less washing up afterwards. Bonus!

Ready, steady, bake…


  • 4 ripe bananas
  • 340g caster sugar
  • 340g self-raising flour
  • 340g Stork margarine
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 6 medium eggs
  • 1 tin Carnation caramel


  1. Pre-heat oven to 160 degrees celcius
  2. Mash the bananas until smooth
  3. Add all ingredients to a mixing bowl
  4. Blend until all ingredients are well-mixed
  5. Pour the mixture equally into 2 greased cake tins
  6. Bake for 1 hour
  7. Leave the tins to cool for 10 minutes before turning out onto a cooling rack
  8. Spread the caramel over the top of the first cake
  9. Place the second cake on top to sandwich together
  10. Dollop the rest of the caramel over the top of the cake and allow to glide over the sides
  11. Decorate or just dive straight in


  • For best results use an electric mixer. I use a Kenwood mixer with a K-beater attachment.
